
Melt--in--your--mouth sugar and butter, with bursts of tart apples and a crumbly cinnamon topping. Served with vanilla-bean ice-cream, topped with fresh whipped cream, warm, cold, any way, these bars are delectable and surprisingly easy to make.
Ingredients:
For the dry mix:
1 cup all purpose flour
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. ground cinnamon
For the wet mix:
1/4 cup butter (half a stick)
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla extract
1/2 - 1 cup chopped apples
For the topping:
1 tablespoons white sugar
1 tsp. ground cinnamon
1. Preheat the oven to 350 and grease a 9 by 9 baking pan.
2. Sift together flour, baking powder, salt, and cinnamon.

3. In a large bowl, mix brown sugar, white sugar, the egg, vanilla, and melted butter until smooth.

4. Mix in the flour mixture and stir in the apples. The original recipe calls for only a half a cup of apples, which is about half an apple, but one time I accidentally put in a whole cup and have made it that way ever since. I think it's a little too sweet otherwise but it's up to you.
5. Spread in 9 by 9 greased pan
6. Mix together 1 tsp. cinnamon and 1 tablespoon sugar. Sprinkle the mixture evenly over the pan.

7. Bake for 20 -25 minuets. If you poke a tooth pick in to test the squares, it shouldn't come our perfectly clean. These bars are best if they are still a little gooey, just don't go over board or you'll end up with raw ingredients.
